FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Method for production of bilberry fruit pectin-containing product includes treatment of bilberry fruits with infrared rays. Preliminary wetting of fruits is not carried out. Infrared radiation treatment of fruits with initial moisture content of pulp of 85–90 % is performed at wave length of 0.9–1.1 mcm and density of radiant flux of 13–15 kW/m2 during 2.2–2.6 minutes till fruits reach temperature 90–100 °C and final moisture content after cooling is 10–12 %.
EFFECT: invention enables to obtain a pectin-containing product having improved quality and high biological value.
