FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Disclosed is a method for production of pectin-containing sweet cherries product, including treatment of sweet cherry fruit raw material with infrared rays, wherein without preliminary moistening, infrared rays treatment of sweet cherry with initial moisture content of 85–90 % is performed at wave length of 0.9–1.1 mcm and radiant flux density of 12–14 kW/m2 during 1.5–2.0 min till fruit temperature reaches 90–100 °C and during subsequent cooling to final moisture content of 10–12 %.
EFFECT: invention enables to obtain a pectin-containing product having high quality and high biological value, while reducing duration of the process, reducing consumption of water, heat and energy and eliminating the use of concentrated acids.
