FIELD: food industry.
SUBSTANCE: invention relates to production of dried fruits and berries. For production of fruit-and-berry products one uses fresh or frozen fruits and berries, which are dehydrated in a sucrose solution with addition of 0.5 % citric acid, heated to 60 °C, dehydrated for 20–150 minutes to moisture content of 12 to 45 %. For fresh fruits and berries, saccharose solution is used with concentration of 65 °Brix, for frozen—sucrose solution with concentration of 75 °Brix. Then fruits and berries are removed onto a sieve and allowed to drain solution. Sprinkle with corn starch at 10 % of the initial weight of the dehydrated product. It is dried by convective method in two stages: at the first stage at 40 °C for 60 minutes, then at the second stage temperature is increased to 60 °C and dried till moisture content in fruits and berries is equal to 85 %. After the fruit and berries are cooled to solid outer layer on surface and water activity 0.587.
EFFECT: prepared ready dried product has improved organoleptic characteristics, increased food properties, quickly dissolves in any water medium; expanded range of products.
