SUBSTANCE: invention relates to a taste-modifying composition containing one or more taste-modifying compounds of formula I

where m is 0 or 1, R3, R4 and R7 are independently selected from hydrogen and linear C1-C3 alkyl groups, R1 is selected from hydrogen, linear C1-C3 alkyl group and -CH2OR', R2 and R6 are independently selected from hydrogen, linear C1-C3 alkyl groups or -OR' or R2 and R6 are bonded to form a cyclohexane ring which is optionally substituted with linear C1-C3 alkyl group, R5 and R8 are independently selected from hydrogen, linear C1-C3 alkyl groups, CH2OR', -CO-R' or -OR', R' is selected from hydrogen or linear C1-C3 alkyl group, with the proviso that if a double bond is present between C2 and C3, then R5 and R7 are absent, if m is 1 and the double bond is present between C4 and C5, then R3 and R1 are absent, if m is 0 and the double bond is present between C2 and C3, then R2 and R6 are joined to form an optionally substituted cyclohexane ring, said taste modifying composition, further includes a solvent, wherein said solvent is a hydrophilic solvent, such as water, propylene glycol, glycerol, ethanol or triacetin. Invention relates to a product selected from a group of food products and beverages. Product contains the above taste-modifying composition containing one or more taste-modifying compounds of formula I in amount of 1 to 200 ppm. Invention relates to the use of said taste-modifying composition for modifying the taste of food products or beverages: sweets, salinity, minds, sensation of astringency, salivation and/or bitterness. Invention relates to a method for improving perception of said flavors in food products or beverages, including providing a food product or beverage and adding to the food product or beverage said flavor modifying composition. Composition is added in an amount such that one or more flavor modifying compounds are present in food or beverages in amount of 1 to 200 ppm.
EFFECT: disclosed is a composition containing compounds which modulate taste and aroma, use thereof and food products containing them.
