FIELD: dairy industry.

SUBSTANCE: invention can be used in production of a processed cheese product. Method involves selection and preparation of raw materials for melting and composition of a cheese mass consisting of rennet cheeses, low-fat cheese, cream, dry defatted milk and melting salts. Cheese mass is transferred into pasteurized hot water with pre-melted cow butter and produced mixture is heated to 70±2 °C with holding at this temperature for 10 minutes with continuous stirring until mixture melts. Then, caraway is added dry powder of sunflower kernels, obtained by crushing pure kernels of sunflower seeds, pre-dried at 80–85 °C until moisture content is 5–7 % and cooled to temperature of 20–22 °C, holy thistle extraction cake and "Selexene" food additive and increasing melt temperature to 80±2 °C, followed by holding for 5 minutes with continuous stirring. Components are used in the stated quantities.

EFFECT: method enables to obtain a product with high organoleptic properties and antioxidant properties.
