FIELD: functional food products.
SUBSTANCE: invention relates to specialized products intended for fast recovery of force after intense muscular load, impact of stresses and acceleration of rehabilitation of patients after severe diseases. Functional food product is characterized by that it represents thermally treated common parsnip and includes in terms of dry weight 25.5±4.5 % fructose, 25.2±1.9 % glucose, and also contains polyphenols in amount of 22.6±2.2 mg-eq gallic acid per g of dry mass and has antioxidant activity 26.1±3.6 mg-eq gallic acid per g of dry mass.
EFFECT: invention allows to produce a new functional product with increased content of monosaccharides and antioxidants.
