FIELD: food industry.
SUBSTANCE: invention relates to food industry and is implemented in compact vacuum microwave dryer. Method of vacuum UHF drying of fruits, vegetables and berries includes heating of initial product to temperature of water boiling, water is evaporated and condensed, wherein the process is carried out in a microwave dryer having a drying chamber with a sealed front door and seven trays with a total area of 1.4 m2. Peltier elements are installed in the chamber for condensation of vapours, on the side of the chamber there is a microwaves dissipator with a magnetron fixed on it, receiver with electric vacuum pump and drain valve is installed under the chamber and connected to it through an electromagnetic valve.
EFFECT: proposed method for vacuum drying of fruits, vegetables and berries allows to produce dried fruit-and-berry products in home conditions, preserving characteristic color, taste, vitamins, considerably reducing time and power consumption.
