FIELD: fish-processing industry.
SUBSTANCE: fish skin is cleaned and washed in running tap water for 20–25 minutes to remove mucus and contaminants. Raw material is then treated with an electrolyte of an ECA solution with pH 4–5, coating the whole solid fraction with periodic mixing. Process is carried out for 2–6 hours. Anolyte of the ECA solution is drained, the fish raw material is treated with succinic acid in amount of 5 g of succinic acid per 995 ml of water at ratio of 1:3–5 to the fish skin weight for 12–18 hours at temperature of 18–25 °C with periodic mixing. Dihydroquercetin is introduced in the form of an alcoholic solution with concentration of 40 % in amount of 0.05 % of the raw material weight. Swollen skin of fish, not separated from solution of succinic acid and dihydroquercetin, is homogenized to obtain a collagen dispersion.
EFFECT: invention provides simplified process and reduced duration of process cycle.
