FIELD: food industry.

SUBSTANCE: invention relates to fish-processing industry. Fish skin is washed twice: first time in 2.0 % solution of mustard powder for 20–25 minutes and second time in tap water for 5–10 minutes. Then the raw material is treated with peroxide-and-salt solution to increase intra-porous pressure in connective tissue by mixing 1 l of 3 % hydrogen peroxide and 18 g of sodium chloride. Process is carried out for 6–12 hours while coating the whole solid fraction with periodic mixing. Then peroxide-salt solution is drained. Fish raw material is treated with succinic acid in amount of 5 g of succinic acid per 995 ml of water at ratio of 1:3–5 to fish skin weight during 18–24 hours at temperature of 16–25 °C with periodical mixing. Swollen skin of fish is homogenised in 0.5 % solution of succinic acid to obtain a collagen dispersion.

EFFECT: invention simplifies the technological process, improves quality of the obtained product, which can be stored at temperature of 3–6 °C for 3 months.
