SUBSTANCE: invention can be used to produce hydrolysates. Method of producing protein hydrolyzate from hydrobionts involves grinding raw materials, mixing raw materials with 5% aqueous solution of succinic acid in ratio of raw materials: aqueous solution of succinic acid as 1:1–3:1 to pH level of 4.0–4.5, performing autolytic fermentolysis of raw material in the form of calamari cutting wastes at 40 °C, and raw material in the form of cooled Baltic herring fillet—at 4 °C to a depth controlled by the level of amine nitrogen, enzyme inactivation of the mixture by returning the pH of the medium to the initial value using potassium, calcium, magnesium carbonates, filtering the hydrolyzate, evaporating to a moisture level of not more than 10% or drying at a temperature not higher than 45 °C.
EFFECT: invention enables to obtain a protein hydrolyzate from hydrobionts.
