FIELD: food industry.
SUBSTANCE: furnace (1) comprising: first and second chambers (13, 14) and at least one heater for heating fluid medium, which prepares product, conveyor means (4) for transporting products from inlet opening (15) through chambers (13, 14) to outlet opening (12), wherein, preferably, conveyor means is at least partially located along screw path (8), separating means (17) for separation of first and second chambers (13, 14), note here that conveyor (4) passes through separator. Note here that it comprises means to set pressure difference (P1−P2) between fluid in first chamber and fluid in second chamber (13, 14) nearby separator (17). Method of operating furnace (1), comprising: first and second chambers (13, 14), in which heated fluid medium respectively prepares product, conveyor device (4) for transportation of product from inlet opening (15) through chambers (13, 14) to outlet opening (12), wherein, preferably, conveyor means is at least partially located along screw path (8), separating means (17) for separation of first and second chambers (13, 14), note here that conveyor 4 passes through separator. At that, difference (P1−P2) of pressures between fluid medium in the first and fluid medium in second chambers (13, 14) is installed or reduced, preferably, near separating facility (17). Method of controlling furnace (1) comprising: first and second chambers (13, 14), in which heated fluid medium respectively prepares product, conveyor device (4) for transportation of product from inlet opening (15) through chambers (13, 14) to outlet opening (12), wherein, preferably, conveyor means is at least partially located along screw path (8), separating means (17) for separation of first and second chambers (13, 14), note here that conveyor (4) passes through separator. At that, difference (P1−P2) of pressures between fluid medium in the first and fluid medium in second chambers (13, 14) is controlled, preferably, near separating facility (17).
EFFECT: invention allows to carry out the process of food product preparation in different chambers and under various process conditions.
