FIELD: biotechnology.

SUBSTANCE: invention represents an isolated version of chymosin polypeptide, characterized by that it (a) has specific coagulation activity (IMCU (international milk-coagulation unit)/mg total protein), which is at least 70 % of specific coagulation activity of the recovered camel's chymosin polypeptide, characterized by SEQ ID NO: 4; and (b) splits casein with frequency less than 50 % of the casein splitting frequency of the recovered camel camisole polypeptide, characterized by SEQ ID NO: 4, where casein splitting is determined by way of quantitative determination of casein peptides obtained by incubation of defatted milk with a version of chymosin or camel's chymosin, where quantitative determination is carried out by RPHPLC (high-performance liquid chromatography with reverse phase) in combination with ESI-Q-TOF mass spectrometer (time-of-flight quadrupole mass spectrometer with electrospray ionisation). Invention also relates to a method for manufacture of a food product using such an enzyme.

EFFECT: variants of chymosin with improved properties are proposed.
