FIELD: food industry.
SUBSTANCE: liquid or dry granular composition of milk clotting aspartic protease enzyme, as well as use thereof are disclosed. Composition of milk clotting aspartic protease enzyme comprises (i) milk clotting aspartic protease enzyme at a strength from 25 IMCU (International milk-clotting units)/g of the composition to 30,000 IMCU/g of the composition; (ii) a polymer in a concentration of 50 million-1 up to 2,500 million-1 (w/w) and (iii) salt in a concentration of 1 to 350 g/kg. Composition pH ranges from 2 to 7, and the salt is selected from the group NaCl, KCl, Na2SO4, (NH4)2SO4, K2HPO4, KH2PO4, Na2HPO4 or NaH2PO4 or a combination thereof. Polymer is a polymer having the following characteristics (a), (b) and (c), where (a) the polymer is a polymer of at least one monomer selected from the group of monomers consisting of: ethylene oxide, vinylpolypyrrolidone, vinyl alcohol, vinyl acetate, acrylonitrile, acrylate and methacrylate; (b) the polymer is a polymer with a molecular weight from 200 g/mol to 50,000 g/mol; (c) the polymer is a polymer with a number of repeating monomer/element (the so-called number "n") from n equal to 5 to n equal to 1250; and (d) optionally, the polymer having the above characteristics (a), (b) and (c) may be a substituted polymer containing one or more substituent compounds other than monomers having characteristic (a), and if the polymer is a substituted polymer, the molecular weight of the substituted polymer itself is in the range of (b), and the molecular weight of the substituent compound(s) is less than the molecular weight of the polymer portion of the substituted polymer. Disclosed compositions can be used in a method of producing a milk-based product. Also disclosed are a method for storing said composition and a method for isolating the milk clotting aspartic protease enzyme of interest from an aqueous medium containing such an enzyme of interest.
EFFECT: invention provides higher stability and/or activity of aspartic protease in the compositions.
