SUBSTANCE: invention relates to the field of biotechnology, specifically to producing chymosin polypeptide having one or more of following substitutions: S164G, Y11I or Y11V, L12M, K19T, V51L, R61S, H76Q, E83S, I96L, L105E, D144Q, Q162S, M165E, L166V, L180I, V203A, L221I, S226T, T239S, R242E, G251D or G251W, L253I, V260T, I263L, R266V, S273Y, Q288E, G289S, E294Q, Y307F, V309I, R316L and/or V317L; or one or more of following substitutions: V32L, I45V, N50K, G70D or G70N, D98V, N100Q, V136I, M142I, H146R, S154A, V155F, M157L, D158S, V198I, I200V, F223V, K231N, G244D, V248I, R254S, M256L, V259I, E262T, D267Q, D279E, T284S, N291Q, N292H, L295K and/or K321P relatively to camel chymosin. Produced chymosin has C/P value of at least 200% of C/P value of isolated camel chymosin; it can be used for producing feed or food product, as well as for producing cheese.
