FIELD: biotechnology.

SUBSTANCE: method of producing an isolated version of a chymosin polypeptide involves (a) creating a change in one or more positions in a parent polypeptide having chymosin activity, wherein the change involves a substitution at the amino acid position corresponding to position 77, to threonine, (b) producing and recovering the altered polypeptide of step (a), where (1) the amino acid position of the parent polypeptide is determined by aligning the parent polypeptide with the polypeptide with SEQ ID No: 1 (bovine chymosin), and (2) the parent polypeptide has at least 65 % sequence identity with a mature polypeptide with SEQ ID No: 1. There are also described versions of chymosin polypeptides and their use in food and fodder products production.

EFFECT: invention enables to obtain versions of chymosin with improved milk-clotting properties, as well as providing an increased ratio of C/P compared to the C/P ratio of bovine chymosin containing a mature polypeptide with SEQ ID No: 1, and camel's chymosin containing a mature polypeptide with SEQ ID No: 2.
