FIELD: biotechnology.

SUBSTANCE: invention relates to the field of biotechnology. Method for producing an isolated version of chymosin polypeptide, comprising the steps of: (a) creating a change in one or more positions in a parent polypeptide having chymosin activity, where the change includes a substitution in at least one amino acid position selected from 154L; 156V; 212A; 224V; 256I and 367I; and (b) producing and recovering the altered polypeptide of step (a), wherein the recovered variant of chymosin polypeptide is a specific variant selected from a group of changes. Embodiments of chymosin polypeptides and their use in production of food and fodder products are also described.

EFFECT: invention enables to obtain versions of chymosin with improved milk-clotting properties, as well as providing an increased ratio of C/P compared to a C/P ratio of bovine chymosin containing a mature polypeptide with SEQ ID NO: 1, and camel's chymosin containing a mature polypeptide with SEQ ID NO: 2.
