SUBSTANCE: group of inventions relates to biotechnology. Disclosed is an isolated version of chymosin polypeptide, comprising a change in position 117 relative to a sequence of bovine chymosin, wherein said variant has chymosin activity, and the initial polypeptide is at least 90 % identical to the mature camel's chymosin polypeptide. Disclosed is a method of producing said variant of chymosin polypeptide by making changes in said positions of initial polypeptide. One proposes a method for preparation of a food product and a method for preparation of a fodder product using the above version of chymosin polypeptide.

EFFECT: group of inventions enables to obtain a version of camel's chymosin with improved milk-clotting properties (with a higher C/P ratio) compared to camel's chymosin.
