SUBSTANCE: group of inventions relates to the poultry-processing industry, namely to a method and an apparatus for producing a shin from a bird's leg suspended from an animal's hooks on a conveyor. Bird's leg includes an anticnemion, a knee joint and a femur from which meat of a hip bone has been separated or should be separated. Device comprises a grip, and the method includes a step of fixing a bird's leg with a grip and ensuring that the bird's leg is held in place, followed by a step of cutting ligaments between the shin and femur to separate the femur and obtaining a shin, and by the step of fixing the bird's leg with the gripper, lifting of the gripper with the bird's leg should be performed so that to lift the ankle joints from the hooks of the conveyor and ensure that the knee joint is installed at the specified height, and to ensure that cutting device is installed at specified height and actuated to cut off knee joint in order to separate femur from shin.

EFFECT: more accurate positioning of the knee joint of the bird's leg and a cutting device in order to ensure an ideal appearance or close to the ideal shin.
