FIELD: processing poultry.
SUBSTANCE: apparatus includes a conveyor with suspensions whereon a poultry leg or part of a poultry leg is suspended by the ankle joints, and rollers under the conveyor, rotating in opposite directions and equipped with engagement teeth capable of engaging with the skin on the poultry leg or part of the poultry leg suspended on the suspensions by the ankle joints, to remove the skin from the poultry leg or part of the poultry leg. The rollers are oriented horizontally and can move up from a first position to a second position above the first position and are arranged so that during use, the engagement teeth of the rollers first capture the skin on the poultry leg or part of the poultry leg, and then move upwards along the poultry leg or part of the poultry leg suspended on the suspensions by the ankle joints, to remove the skin from the poultry leg or part of the poultry leg. The method includes transporting the poultry leg or part of the poultry leg suspended and retained by the ankle joints on the conveyor, capturing the skin on the poultry leg or part of the suspended poultry leg by rollers, on the condition that the rollers have engagement teeth rotating in opposite directions. The rollers are placed horizontally, and after the rollers engage with the poultry leg or part of the poultry leg to capture the skin on the poultry leg or part of the poultry leg, the rollers are moved upwards so that the skin on the poultry leg or part of the poultry leg is removed from the poultry leg or part of the poultry leg.
EFFECT: group of inventions provides high efficiency of skin removal with the amount of meat adjacent to the separated skin brought to a minimum, with high production rates.
