SUBSTANCE: device and method for poultry meat poultry recycling on the processing line equipped with poultry legs conveyors. Each conveyor is assembled for transportation of bird's leg suspended for its ankle joint, leg includes shin and knee joint, and hip of bird with femur, and the device includes a cutting device for cutting a bird's leg and a scraper for separating poultry hip from a hip bone. Scraper of the device is assembled to grip the bird's leg near its knee joint and hold the knee joint in place, and the cutting device is assembled for making the first incision in the bird's leg, while the scraper holds the bird's leg, and where the cutting device is assembled to make a cut near the scraper and under the knee joint at the height of the hip joint from the knee joint so that to cut the ligaments that connect the thigh meat with the femur.

EFFECT: higher quality of meat output during poultice thighs relief, simplified device and method for meat separation from poultry hip bone.
