FIELD: food industry.

SUBSTANCE: proposed deep fryer (10) contains deep-cooking capacity (12) setting one culinary treatment chamber intended for food product reception, for which culinary treatment cycle is to be performed; and controller (200). Controller controls operation of deep fryer (10) and is configured to control temperature of culinary treatment medium located in container (12) for cooking, using first predetermined temperature during cooking cycle; determining whether to follow the cycle of culinary treatment a filtration cycle; and in response to determining that a cooking cycle must follow a cooking cycle, control the temperature of the cooking medium in deep-cooking container (12), during at least a portion of the cooking cycle using a second predetermined temperature value which is higher than the first predetermined temperature value. Invention also discloses a method for filtration of a culinary treatment medium in a deep fryer, and a computer-readable data medium storing program code for controlling the fryer.

EFFECT: invention is aimed at reduction of culinary medium replacement frequency and reduction of equipment return time from filtration mode to culinary treatment mode.
