FIELD: furnaces and ovens.
SUBSTANCE: group of inventions relates to equipment for removal of contaminated air, which is created during operation of ovens and grill-furnaces, to prevent ingress of heat, smoke, steam, fats and contaminated air in the kitchen and people's breathing area. Disclosed group of inventions includes device and method of smoke and steam trapping and removal for closed kitchen furnaces. Claimed device for smoke and steam trapping and removal for closed kitchen furnaces comprises exhaust hood (4) for catching emissions (3) located directly above furnace door (2), wherein length of hatch (A) is equal to or slightly greater than door length (B), width of hood (C) is from 50 to 200 mm, at that, inside the exhaust hood, there is a device for uniform distribution of air flow rate (5) over its entire suction surface, having aerodynamic resistance, approximately equal throughout the device surface, wherein access to it can be both from suction hole side of exhaust hood, and from frontal surface, wherein the distance between the lower (suction) cut of the hood to the device for uniform distribution of the air flow rate (D) is equal to or greater than the width of the hood (C), to connect the exhaust hood to the fan, to the exhaust ventilation system or to the smoke removal system, the hood is provided with one or several branch pipes (6). Disclosed method of smoke and steam trapping and removal for closed kitchen furnaces consists in the fact that exhaust hood (4) for catching emissions (3) is installed directly above furnace door (2), wherein the length of the hatch (A) is equal to or somewhat greater than the length of the door (B), the width of the hood (C) from 50 to 200 mm, inside the exhaust hood, a device for uniform distribution of air flow rate (5) over its entire suction surface, wherein the device for uniform distribution of the air flow rate has aerodynamic resistance, approximately equal throughout the surface of the device, wherein access to it can be both on the side of the suction hole of the exhaust hood, and from the front surface, the distance between the lower (suction) cut of the hood to the device for uniform distribution of the air flow rate (D) is set as equal to or greater than the width of the hood (C), for connecting the hood to the fan, to exhaust ventilation system or to smoke removal system umbrella is equipped with one or several branch pipes (6), at that, ejected smoke and steam from closed kitchen ovens comes out and enters the installed device for smoke and steam trapping and removal for closed kitchen furnaces as per item 1 and further passes through air flow rate uniform distribution device, then through the connection pipe to the ventilation system, the smoke and steam with the provided uniformity of the velocity flow along the entire slit of the slit exhaust hood are removed from the slit hood.
EFFECT: technical result of claimed group of inventions is prevention of smoke and steam release from furnace at its door opening and reduced required capacity of exhaust ventilation system or smoke removal system due to layout of exhaust hood and suction speed equalization throughout suction surface of exhaust hood.
