FIELD: processing industry.

SUBSTANCE: invention relates to the processing industry, in partiular to a method for producing collagen. Disclosed is a method for producing high-molecular collagen, wherein freshwater fish skins are additionally cut and sorted by the thickness of the skin prior to the primary washing. The primary washing is carried out with a solution with a fatty solvent based on a fruit acid. Hydrogen peroxide with a mass concentration of 4.0÷10.0% is used for the peroxide-alkaline treatment of rinsed skins and organic acid is used to achieve the pH of the solution of 1.0÷3.0. During the holding the ultrasonic action is carried out, after holding the skins in the solution of organic acids, they are ground to particles with a size of 2.0÷5.0 mm, neutralized with an alkaline solution to a pH of 4.5÷7.0, and after homogenization, the mixture is filtered from the residues of the fibrous skin. Distilled water is added to the filtrate in a ratio of 1:5÷1:10 and is exposed to cold sterilization and additional ultrafiltration for removing chemical impurities and concentration. It is then re-sterilized with ultraviolet.

EFFECT: technical result consists in an increase in the yield of a high-quality collagen molecule in a hydrated form.
