FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Variants of the method of freezing fresh seafood are proposed. In the first variant, the method contains a step in which an ice suspension is obtained by mixing ice formed by freezing salt water having a salt concentration of 13.6% to 23.1%, and salt water having a salt concentration of 13.6% to 23.1%, and the step, at which fresh seafood or parts of it are instantly frozen by immersing fresh seafood or parts of it in an ice suspension. In this case, the mass ratio between ice and salt water to be mixed is ice: salt water = 75:25 to 20:80. The second variant of the method includes the same freezing steps if the following conditions are met. The temperature of the ice after complete melting is below -5°C. The change in the value of the salt concentration in the water solution formed from ice during melting, measured at any time and at the end of melting, is 30% or less.
EFFECT: invention is aimed at preserving the freshness of frozen seafood.
