SUBSTANCE: invention relates to the food industry and can be used for flavoring dairy and bakery products, confectionery, including flour products. A food flavoring agent is proposed that imparts aroma and taste to baked milk, which includes delta-decalactone, diacetyl, propionic acid, acetic acid, delta-dodecalactone, gamma-nonalactone, capric acid, ethylmaltol, ethyl laurate, 2,3,5-trimethylpyrazine, fu 4-methyl-5-thiazoleethanol, levulinic acid, medium-chain triglycerides for food use in the form of a mixture of triglycerides of caprylic (С8) and capric (С10) acids and an inactive component - a solvent, or a solvent and an emulsifier, or a filler, or an encapsulating agent, or an anti-caking agent in the following ratio of starting components, wt%: delta decalactone 1.0-5.0; diacetyl 1.0-4.0; propionic acid 1.0-2.0; acetic acid 0.5-2.0; delta-dodecalactone 2.0-5.0; gamma-nonalactone 0.5-2.0; capric acid 2.0-7.0; ethyl maltol 2.0-7.0; ethyl laurate 0.05-0.3; 2,3,5-trimethylpyrazine 0.005-0.01; 4-methyl-5-thiazoleethanol 0.5-3.0; levulinic acid 0.1-0.3; furaneol 0.1-1.0; medium chain triglycerides for food use in the form of a mixture of triglycerides of caprylic (С8) and capric (С10) acids 8.0-30.0; inactive component - up to 100. It additionally contains an aroma enhancer and/or an aroma modifier and/or an aroma stabilizer and/or a state of aggregation stabilizer.
EFFECT: invention expands the arsenal of flavoring agents that give food products a characteristic taste and aroma of baked milk, as well as enhances the sensation of fat in the taste of low-fat products and preserves this taste and aroma when freezing food or semi-finished products to temperatures below minus 15°C, their long-term storage at low temperatures and subsequent defrosting and heat treatment.
