SUBSTANCE: invention relates to the food industry and can be used for flavoring dairy, bakery and confectionery products. The food flavoring that gives the aroma and taste of concentrated milk contains the following components, wt.%: delta-decalactone - 1.0-5.0, delta-dodecalactone - 1.0-5.0, acetoin - 0.1-0, 5, gamma-nonalactone - 1.0-3.0, butyric acid - 0.1-0.5, ethyl butyrate - 0.1-0.5, 4-methyl-5-thiazoleethanol - 0.5-3.0 , 5 (6) decenoic acid - 0.5-3.0, delta-tetradecalactone - 0.5-4.0, myristic acid - 0.05-0.5, 2.3-pentanedione - 0.02-0 ,1, butyl butyryl lactate - 0.2-1.0, ethyl lactate - 0.05-0.2, ethyl maltol - 1.0-5.0, hexyl alcohol - 0.02-0.1, inactive component - up to one hundred.
EFFECT: invention expands the arsenal of flavoring agents that give food products a characteristic taste and aroma of concentrated milk, and also ensures the preservation of this taste and aroma during freezing of products or semi-finished products to a temperature below minus 15°C, their long-term storage at low temperature and subsequent defrosting and heat treatment.
