Proposed is a food flavoring that imparts the taste and aroma of rum, which includes vanillin, rum ester, ethyl propionate, ethyl acetate, isoamyl alcohol, ethyl butyrate, ethyl formate, acetaldehyde diethyl acetal and an inactive component - a solvent, or a solvent and an emulsifier, or a filler, or an encapsulating agent, or an anti-caking agent. agent, with the following ratio of initial components, wt.%: vanillin - 0.1-0.8; rum ether - 0.8-3.0; ethyl propionate - 1.0-8.0; ethyl acetate - 10.0-25.0; isoamyl alcohol - 10.0-15.0; ethyl butyrate - 5.0-20.0; ethyl formate - 2.0-10.0; acetaldehyde diethyl acetal - 0.01-0.04; inactive component - up to 100. At the same time, the food flavor additionally contains a flavor enhancer and/or flavor modifier and/or aggregate state stabilizer and/or flavor stabilizer. Contains ethyl vanillin or ethyl maltol as a flavor enhancer. As an aroma modifier, it contains at least one component selected from the group including allyl-3-cyclohexylpropionate, gamma-nonalactone, furfural. As an aroma stabilizer, it contains at least one component selected from the group including alpha-tocopherol, butylhydroxyanisole, potassium sorbate. As a stabilizer of the state of aggregation, it contains at least one component selected from the group including gum arabic, guar gum, dammar gum, mixtures of fatty acids, sulfated polysaccharide, pectin, polyvinyl alcohol, carboxymethyl cellulose, sorbitol. In this case, the food flavoring may be a solution, or an emulsion, or a powder, or a powder, or a granule, or a paste. As a solvent, it contains at least one component selected from the group including propylene glycol, benzyl alcohol, ethyl alcohol, triacetin, water, vegetable oil. As an emulsifier, it contains at least one component selected from the group including polysaccharide, pectin, glycoprotein, non-ionic surfactant, polyvinyl alcohol. As a polysaccharide, it contains at least one component selected from the group including xanthan gum, guar gum, gum arabic. As a water-soluble high molecular weight adsorbent suitable for food use, it contains at least one component selected from the group including maltodextrin, modified starch, lactose, dextrose, gum arabic.
EFFECT: invention makes it possible to obtain a food flavoring agent that can be used for the preparation of long-term storage food products, including those stored at low temperatures of minus 15°C, fatty products with a minimum moisture content of less than 1%, while maintaining the aroma and taste characteristic of natural alcoholic beverage rum gold, amber type.
