FIELD: confectionery industry.
SUBSTANCE: invention relates to the confectionery industry. Chocolate mass for special-purpose chocolate production includes cocoa butter, cocoa mass, cocoa product substitute, sweetener, thinner and flavoring agent. A substitute for cocoa products is obtained by roasting grape seeds, followed by their two-stage grinding. In this case, soy lecithin is used as a thinner, and a mixture of granulated sugar, stevioside and inulin is used as a sweetener. The initial components are taken in a certain mass ratio.
EFFECT: invention ensures the structural, mechanical and organoleptic properties of the chocolate mass for the production of specialized chocolate, close to the properties of the chocolate mass made by standard technology, lowering the sugar content and increasing the content of dietary fiber in the finished product.
