FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to confectionary branch and can be used in production of enriched chocolate masses and ready products from them. Composition is proposed for preparation of enriched chocolate mass and ready products from them. Composition contains, wt.%: ground cocoa 39.0-42.0; cocoa butter 13.0-16.0; inulin 3-7; soya phosphatide concentrate (lecithin) 0.3-0.6; flavouring agent 0.1-0.2; bean extract powder 1.5-3.5; garcinia cambogia fruit extract powder 0.16-0.5; sugar powder – balance.
EFFECT: invention is aimed at creation of enriched chocolate masses and ready products from them due to introduction of food fibres into the product composition to the level correlated with physiological norms of consumption, carbohydrate assimilation blockers: bean extract powder containing biologically active substances, including phaseolamine to the level of proven alpha-amylase inhibition and garcinia cambogia extract powder containing a biologically active substance – hydroxycitric acid to a level correlated with physiological consumption norms, which in total impart a preventive property to the semi-products and finished products thereof.
