FIELD: alcohol industry.
SUBSTANCE: method involves performing, at a reduced pressure, continuous fermentation of the wort and removal of water-alcohol vapours and carbon dioxide, condensation of vapours, transfer of heat released during vapour condensation to the fermenting wort. Condensation is performed inside a sealed container on the outer surface of the evaporator of an refrigerating machine, located in the atmosphere of the container outside of the fermenting wort and on other internal surfaces with direct or indirect thermal contact with the evaporator of the refrigerating machine; condensation surfaces are blown using a gas-blowing apparatus providing circulation of the vapor-gas medium along the contour: condensation surfaces - fermenting wort mirror - condensation surfaces; intermediate collection of the condensed water-alcohol vapours is performed in a cooled condensate collector placed inside the sealed container; the heat released during vapour condensation is transferred by means of direct or indirect thermal contact of the condenser of the refrigerating machine with the fermenting wort.
EFFECT: allows simultaneous continuous fermentation and removal of alcohol, water and carbon dioxide from the fermenting wort at a reduced pressure in a fermentation container.
