SUBSTANCE: method involves continuous wort fermentation and continuous distilling off aqueous-alcoholic vapors and carbon dioxide forming in the fermentation process that are carried out under reduced pressure, compression of indicated aqueous-alcoholic vapors and carbon dioxide, condensation of aqueous-alcoholic vapors, transfer of heat forming in the process of condensation of aqueous-alcoholic vapors to wort. Continuous removing the condensed aqueous-alcoholic vapors and carbon dioxide is carried out simultaneously, their separation and continuous addition of wort in the process of removing condensed aqueous-alcoholic vapors, carbon dioxide and distillery grains. For fermentation wort with the concentration of dry substances above 25% by weight is used. Fermentation and distilling off processes are carried in battery including sealed capacity fermentation-distillation off joined sequentially by wort and fitted with lines for wort circulation additionally from each the following capacity except for the last one into the first among them. Continuous transference of wort is carried out sequentially by all capacities from one or some capacity fermentation-distilling off into the first one among them. Invention provides intensifying the process of ethyl alcohol preparing.
