FIELD: biotechnology, food industry.
SUBSTANCE: invention relates to biotechnology and is a new bacterial preparation based on strains with proteolytic activity for use in the production of fermented meat products. The preparation is a mixture of strains of lactic acid bacteria with a high potential for proteolysis of meat raw materials: Pediococcus acidilactici VKPM (the National collection of industry microorganisms) B-8902 (38), Lactobacillus curvatus VKPM B-8889 (1), Staphylococcus carnosus VKPM B-8953 (108), isolated from raw fermented sausages taken in an equal percentage.
EFFECT: invention promotes the transformation of raw meat components into compounds that determine the properties of the product, color formation, the formation of biologically active peptides and increase its nutritional and biological value.
