SUBSTANCE: invention relates to agriculture. Method for production of fermented soya or rapeseed fodder meal, including moistening, introduction of lactic acid microorganisms, yeast and micromycetes, stirring and fermentation at temperature of 27–32 °C followed by drying at temperature of 60–70 °C to residual moisture content of 5–12%, characterized by the fact that lactic acid bacteria are used — Lactobacillus plantarum VKPM B-2118, Pediococcus acidilactici VKPM B-12151 in concentration of each microorganism 1*109 CFU/ml, yeast used is Saccharomyces cerevisiae VKPM Y-100 at concentration of 1*108 CFU/ml, and additionally as a microscopic fungus, Aspergillus oryzae VKPM-F-1007 in concentration of 1*106 CFU/ml. Invention allows to produce a fodder additive with a reduced amount of anti-nutritional factors, high protein content, increased fraction of low-molecular peptides weighing about 10 kDa, accumulation of lactic acid, increased weight fraction of amino acids.

EFFECT: protein emulsifying capacity is increased by 10 % relative to non-fermented control.
