SUBSTANCE: group of inventions relates to a machine for preparing and dispensing espresso coffee and a method for preparing and dispensing espresso coffee. The machine for preparing and dispensing espresso coffee contains a water supply device, a distribution group and a corresponding coffee boiler for containing water under pressure, a heating device for heating water in the coffee boiler, a temperature sensor for measuring the temperature of water in the coffee boiler, a processor connected to the temperature sensor and made with the possibility of activating the heating device so that water in the coffee boiler is at a set reference temperature (Trif, Trif_new). The processor contains a feedback system (PID). The value of the set reference temperature (Trif, Trif_new) changes depending on the first parameter, which is a function of time passed since a working cycle of the machine, or a function of the frequency of use of the machine over a time interval.

EFFECT: technical result is the creation of the machine for preparing espresso coffee that supplies heated water in such a way that it reaches a briquette of coffee powder at a given temperature, regardless of the frequency of use of the machine, a water flow channel and contact with a number of elements and/or environmental factors to obtain high repeatability and uniformity of quality during the dosing of the drink.
