SUBSTANCE: machine for making and dispensing espresso is described, wherein the mentioned machine contains a coffee boiler, a filter holder with a filter for a briquette of pressed coffee powder, a preliminary brewing chamber, and a hydraulic contour for moving water under pressure from the mentioned coffee boiler to the preliminary brewing chamber. In this case, the mentioned machine additionally contains a device for determining a parameter indicating the filling of the mentioned preliminary brewing machine and the mentioned hydraulic contour, so that a stage of espresso dispensing may start based on the mentioned determined filling parameter. In accordance with the present invention, a change in a value of a parameter indicating the filling of an empty area upstream from the coffee powder briquette is determined. This filling parameter is taken into account for the following preliminary brewing stage and an actual extraction stage.
