SUBSTANCE: invention relates to the food industry, namely to dry mixes for making vegan omelets. The dry mixture includes the following initial components, wt. %: full-fat soy flour from heat-treated seeds 60.0-63.0, full-fat amaranth flour from heat-treated seeds 30.0-32.5, crushed dried amaranth leaf of the Valentine variety 7.0-8.0.
EFFECT: invention ensures the production of a dry mixture ready for use after adding water, with the energy value inherent in omelets prepared using traditional technology, as well as an increase in the body's resistance to environmental stress factors.
