SUBSTANCE: proposed is an apparatus (100) for preparing a portion of a coffee beverage from a volume of water and a mass of ground coffee beans. The apparatus comprises a brewing chamber (102) for accommodation of ground coffee. Water is supplied to the chamber through an inlet (128). The water comes into contact with the ground coffee contained in the chamber and exits the chamber through an outlet (130). The ground coffee dispensing apparatus (104) dispenses coffee beans into the chamber, and the water supplying apparatus (124) supplies water to the chamber. The controller (134) controls the ground coffee dispensing apparatus and the water supplying apparatus so as to brew a portion of a coffee beverage by performing multiple stages of brewing. Each stage of brewing includes passing a portion of the volume of water through the chamber for contact thereof with another portion of the mass of coffee beans for a period of time equal to the required brewing period.
