FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the confectionery industry, which concerns the technology of preparation of flour-based confectionery products. The composition for making a cake is proposed, including the following initial components: Tatar chak-chak 200 g, for making a cake from nut meringue, g: egg 120; sugar 25; powdered sugar 80; almond flour 105, for making butter cream with kyrt, g: cream cheese 250; butter 200; ricotta cheese 250; vanilla flavor 2; powdered sugar 300; kyrt 400, for the preparation of the filling of crushed dried apricots with the addition of walnuts, g: dried apricots - 200; walnut - 50; water - 200, for the preparation of the filling of crushed prunes with the addition of walnuts, g: prunes 200; walnut 50; water 200, for the preparation of cream for cake decoration, g: cream cheese 1400; powdered sugar 400; cream (33%) 200. A cake made from the specified composition is also proposed, which consists of two cakes in the form of nut meringue, between which layers of filling are placed in the following sequence, from top to bottom: a layer of crushed dried apricots with walnuts added in the form of puree, then a layer of butter cream with kyrt, a layer with Tatar chak-chak, a layer of butter cream with kyrt, then a layer with a filling of crushed prunes with walnuts added in the form of puree, and on top of the cake is covered with cream for decoration.
EFFECT: objective of the claimed invention is to ensure the expansion of the range of flour confectionery products due to the taste of the cake, which contains Tatar chak-chak and kyrt.
