FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology and is new enzyme phytase that exhibits unexpectedly high thermal stability compared to available phytases. In addition, some of new phytase options show an increase in the rate of catalysis up to four times, which significantly increases the rate of dephosphorylation of phytate.
EFFECT: obtaining new thermostable phytases with high catalytic efficiency.
