FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of confectionery, alcoholic and non-alcoholic beverages, dairy products to give them a characteristic taste and aroma of a mixture of tropical fruits. A food flavoring agent is proposed that imparts the taste and aroma of tropical fruits, which includes linalool, citral, hexenal-2-trans, ethyl caprylate, hexyl acetate, allyl caproate, 2-methyl-4-propyl-1,3-oxathian, gamma-decalactone, gamma octalactone, isoamyl acetate and an inactive component - a solvent, or a solvent and an emulsifier, or a filler, or an encapsulating agent, or an anti-caking agent, with the following ratio of starting components, wt%: linalool - 0.1-0.8; citral - 0.8-3.0; hexenal-2-trans - 0.05-1.0; ethyl caprylate - 0.1-2.0; hexyl acetate - 0.4-2.5; allyl caproate - 1.0-5.0; 2-methyl-4-propyl-1,3-oxathian - 0.01-0.05; gamma decalactone - 0.5-2.0; gamma octalactone - 1.0-3.0; isoamyl acetate - 1.0-3.0; inactive component - up to 100. It may additionally contain an aroma enhancer and/or an aroma modifier and/or an aroma stabilizer and/or a state of aggregation stabilizer.
EFFECT: invention expands the range of flavors that give products an original taste and aroma of a mixture of tropical fruits of mango, pineapple, papaya, orange and guava, which can be used in the preparation of products for long-term storage, including those stored at low temperatures (minus 15°C), products of “shock” freezing, fatty products with a minimum moisture content (less than 1%), and also provides an increase in the stability of the aroma while preserving the original taste and aroma of tropical fruits when frozen products, their long-term storage at low temperatures and subsequent defrosting and heat treatment, which allows expanding the range of food products.
