FIELD: food industry.
SUBSTANCE: present invention provides films for edible food shells. The proposed film for an edible food shell contains at least one hydrocolloid, which may not necessarily be chemically coagulated, selected from a group consisting of alginate salt and pectin, and at least one water-soluble hydrocolloid vegetable gum selected from gellan gum and glucomannan. The gum forms a thermally irreversible water-insoluble gel, water-soluble hydrocolloid vegetable gum is present in an amount from 24 to 80 wt. %, based on the mass of dry solids of the film for edible food shell. The mass ratio of the specified at least one hydrocolloid to the specified at least one hydrocolloid vegetable gum is in the range from 0.2 to 1.45: from 1.0 to 3.0, based on the mass of dry solids of the film for edible food shell.
EFFECT: invention is aimed at obtaining food shells that are easily chewed and demonstrate improved filling and cooking properties.
