FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method is proposed for obtaining a food concentrate from root crops, which includes inspection, washing, cleaning, cutting turnips or rutabagas, mixing with rice or barley groats, edible salt, natural honey or sunflower oil, allspice, drinking water. Hydroacoustic treatment to a temperature of 100-102°C, exposure for 10-15 minutes, drying on a roller dryer at a temperature of 50-70°C to a moisture mass fraction of not more than 12%, cooling to a temperature of 18-20°C, screening, packaging. Storage of the product in conditions of uncontrolled positive temperatures with a relative humidity of no more than 75% for 6 months.
EFFECT: invention provides for the production of an instant food concentrate.
