FIELD: microbiology.
SUBSTANCE: invention relates to microorganism identification. A method for the detection of presence or absence of a microorganism in a food product matrix is proposed. A part of the food product matrix is homogenized. The homogenized matrix containing a microorganism is incapsulated in a set of drops of an “oil-in-water” emulsion, in which a microbiological nutrient medium is also incapsulated. The set of emulsion drops is incubated at a temperature allowing microbiological growth, for a period of time, so that microorganisms can pass through 5-45 periods of doubling time. Emulsion drops containing microorganisms are identified by the detection of autofluorescence in the set of drops.
EFFECT: method provides for accurate values of microbe number and allows for quick analysis compared to standard cultivation.
