A method for determining the weight fraction of total mercury in food products is proposed, which provides a procedure for eliminating the influence of the composition of the food sample on the measurement results, which made it possible to use only one standard sample of the weight fraction of total mercury, single for a subgroup of homogeneous food products. As a basis for the creation of such a standard sample, any individual type of food products can be used within the selected subgroup of homogeneous food products and it is assigned the status of a standard sample of the weight fraction of total mercury, single for a subgroup of homogeneous food products.

EFFECT: method makes it possible to provide at least 75-fold economic efficiency.
