FIELD: food industry.

SUBSTANCE: proposed method for producing a standard sample of a food product for determining the mass fraction of heavy metals includes contamination of food samples with heavy metal compounds and involves sampling the food product, drying the sample to an air-dry state and grinding it to a powdered state, determining the mass fraction of a heavy metal in the sample, calculating the required value of the mass fraction of the heavy metal in a standard sample of the food product, mixing the selected sample of the food product and a standard sample of the mass fraction of the heavy metal in agricultural crop products in predetermined quantities to produce a standard sample with a given mass fraction of heavy metal. The standard sample of the mass fraction of heavy metal in agricultural crop products is therein produced in accordance with the following stages: introducing a heavy metal into the soil, cultivating an agricultural culture on polluted and unpolluted areas, harvesting the crops, drying samples to an air-dry state, grinding the samples to a powdered state, determining the mass fraction of the heavy metal in the samples, mixing the samples to obtain the required values of the mass fraction of the heavy metals.

EFFECT: obtaining standard samples of a food product, homogeneous and stable during storage.
