FIELD: food industry.

SUBSTANCE: invention relates namely to the production of food wheat-rye-hemp flour from a wheat-rye-hemp grinding grain mixture. The method for producing wheat-rye-hemp flour is characterized by the fact that the initial raw materials are first purified, then a grinding mixture is made from prepared wheat and rye grain, as well as hemp seeds in a ratio of 4.6:4.6:0.8. The original grain of wheat and rye is mixed in a ratio of 4.6:4.6, preliminarily subjected to hydrothermal treatment using the cold conditioning method, moistening to a moisture content of 15-16% and cooling for 10-14 hours. A grinding mixture is made up of hydrothermally treated wheat and rye grain in an amount of 92 wt.% and hemp seeds in an amount of 8 wt.%. The finished mixture is crushed on roller machines with placement of corrugations tip-to-tip with a fast roller rotation speed of 5.0 m/s, with a ratio of circular speeds of fast and slow rotating rollers of 2.0, with a density of cutting rollers of 8 pieces per 1 cm, with an angle of corrugation tips of 10%. Then the grinding product is sorted on sieves of various sizes.

EFFECT: invention makes it possible to obtain the finished product with a high content of fat and protein, as well as to expand the range of flour-based food products by using processed wheat-rye-hemp grain mixture in baking and confectionery industries.
