SUBSTANCE: inmvention relates to the food industry, namely the production of freeze-dried banana. In the proposed method, a banana is frozen before drying, cut into plates 10-20 mm thick and dried by sublimation in two stages: at the first stage, lasting 3 hours, infrared heaters with a wavelength of 2 mcm are used, and at the second stage, infrared heaters with a wavelength of 0, 8 µm. In this case, the residual pressure in the chamber should be 50 Pa, and the product heating temperature should not exceed 40°C.

EFFECT: invention makes it possible to obtain a high-quality product with a pronounced characteristic taste, retaining its original shape, with a moisture content of not more than 5%.
