FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely the production of lyophilized orange. In the proposed method, an orange is peeled before drying, cut into plates, 10-15 mm thick and dried by sublimation in one layer in two stages: at the first stage, infrared heaters with a wavelength of 1.6 mcm are used, at the second stage infrared heaters with a wavelength of 0.8 microns are used. In this case, the residual pressure in the chamber should be 50 Pa, and the product heating temperature should not exceed 40°C.
EFFECT: invention makes it possible to obtain a high-quality lyophilized product with a pronounced characteristic taste, retaining its original shape, with a moisture content of not more than 5%, with a relatively short dehydration time.
