SUBSTANCE: disclosed is a method for sublimation drying of fruit-and-berry raw materials, in which fruit-and-berry raw materials are dried at a residual pressure of 50–150 Pa and a product heating temperature of not more than 40 °C. At that, fruit-and-berry raw materials are preliminarily subjected to treatment by atmospheric high-voltage gas discharges with specific discharge energy, reduced to weight of fruit-and-berry raw material, Wsp=1–3 kJ/kg, determined from condition Wsp=(Wimp*n)/m, where Wimp is unit discharge energy, J; n is the number of digits, m is the weight of the processed fruit-and-berry raw material, kg, after which they are frozen.

EFFECT: invention provides increase in productivity of production of sublimated fruit-and-berry raw materials.
