SUBSTANCE: invention relates to beverage technology. Method for producing dissolvable extracts for preparing beverages includes sorting fresh fruits, berries, leaves and grasses by quality, then washing with cold running water in a washing vibrating machine, dried in an IR dryer on mesh ceramics-coated trays to a residual moisture of 5 to 7% for leaves, 10 to 12% for fruits and berries. The dried fruits, berries, leaves and grasses are crushed in a grinder to a particle size of 1 to 3 mm, poured over with filtering or boiling-purified water in a ratio of 1:10, heated to a temperature of 70°C and held in a vacuum apparatus with a residual evacuation of 21 to 23 kPa and the mixer activated for 30 to 40 minutes until at least 5% soluble dry extractive substances accumulate in the extract, the resulting extract is decanted from the plant-based raw materials, filtered through a 0.8 mm sieve, directed to the vacuum apparatus and concentrated therein at a residual evacuation of 21 to 23 kPa and with the mixer activated until at least 50% soluble dry extractive substances accumulate in the extract. The extract is then supplied for drying to a spray dryer, resulting in a water-soluble powder with a moisture content of 8 to 10%. Berries and leaves of black currant, berries and leaves of strawberry, apple leaves and apples, birch leaves and mint leaves at a certain mass ratio are therein used as fruits, berries, leaves and grasses.
EFFECT: possibility of producing beverages based on dissolvable extracts with high antioxidant activity.
